花青素又称花色素，基本结构为2-苯基苯并吡喃型阳离子，常与一个或多个葡萄糖形成各种花色苷而广泛存在于蓝莓、葡萄、紫甘薯、黑加仑、胡罗卜、紫苏和红苷蓝等植物中，发挥抗氧化作用。花青素具有增强免疫功能、抑制肿瘤细胞生长、保护肝脏以及有效减轻由氧化应激引起的神经细胞损伤等作用。
